To 'reduce' the tanning effect of our barrels, you should - 1. Fill the barrel with boiling water, let it cool and empty it - 2. Re-fill the barrel with cold water, let it settle at room temperature and re-empty - 3. You will observe that in the first few times, the drained water was dark, so, repeat and re-fill the barrel with cold water as many times as needed untill the drained water gets clear. Like this the oak tannins will be reduced and will have lower effect on the liquors that you would pour inside in future.
Should you wish to further lower the tannins level, repeat the cold water filling process a more times. Its important to note that it is quite possible for a new barrel to leak for a couple if days. This is quite normal and the above process would make the wood expand naturally and the barrel seals naturally besides lowering tannins levels. If you leave the barrel empty for a few weeks the wood would shrink again and the curing process (ie filling with cold water so the wood exapnds, barrel seals) must be re-done.
During the above process, DO NOT USE the bungs since these could easily get stained with the initial darker water.
